Barely-Cooked Asparagus with Basil Pesto

For a great healthy snack, good for any time of the day try this cooked asparagus with basil pesto.  You will need 1-2 tsp. of salt, 1 pound of fresh asparagus and basil pesto, either purchased or homemade. First start boiling water and add salt. Then trim the asparagus and cut them diagonally into short pieces about two inches long. When the water is boiling add the asparagus and leave them to cook for about 3 minutes. After the asparagus is cooked, drain it and put it into a bowl to add the pesto. When the pesto is added leave it to melt for two minutes and then mix it all together. Now the asparagus is ready to eat. Not only is this a quick recipe but you get your servings of vegetables too.
