Thai Cucumber Salad

A recipe I found to be very tasty but requires a little more effort is a Thai cucumber salad. It is easy to make and has some delicious ingredients.  This is a salad that you would only get at Thai restaurant and now you can make it at home. You will need a sharp knife and a blender. The ingredients include cucumbers, jalapeños, scallions and cilantro. Barely-Cooked Asparagus with Basil Pesto

For a great healthy snack, good for any time of the day try this cooked asparagus with basil pesto.  You will need 1-2 tsp. of salt, 1 pound of fresh asparagus and basil pesto, either purchased or homemade. First start boiling water and add salt. Then trim the asparagus and cut them diagonally into short pieces about two inches long. When the water is boiling add the asparagus and leave them to cook for about 3 minutes. After the asparagus is cooked, drain it and put it into a bowl to add the pesto. When the pesto is added leave it to melt for two minutes and then mix it all together. Now the asparagus is ready to eat. Not only is this a quick recipe but you get your servings of vegetables too. tasty grilled salmon with mashed potatoes

For those who love seafood and want a tasty meal that won’t take up a lot of time to make try a deliciously, simple-to-make salmon with mashed potatoes on the side. You will need one salmon fillet, a garlic spread, some minced garlic, 2 tbsp. of olive oil, lime juice and ground black peppers. For the mashed potatoes you can either make them from scratch or buy Idahoan mashed potatoes in which you will only have to mix with water and is ready in four minutes. To prepare the salmon you will first have to leave it to defrost if it’s frozen, if not then you can begin to put the condiments on it. First, spread some lemon juice and then spread the garlic spread on the salmon. Top it off with some ground black pepper. On the pan add the olive oil and the minced garlic for more flavor. Grill the salmon for about 7 minutes or until the fish is flaky. Once that’s done you are ready to enjoy the meal with you choice of mashed potatoes or any other side you choose. Enjoy! IMG_3439

A touch of Colombian spice

If you have about 20 minutes to prepare lunch you might want to try a splash of culture with a Colombian hotdog. My roommate, who happens to be Colombian, brought this recipe to my attention. Unlike your regular hot dog, Colombian hotdogs are very rich in flavor and have a mix between sweet and sour. The special touch for these hotdogs is a pineapple sauce.   • 2 cups fresh pineapple, peeled and cut into chunks
  • 1/3 cup water
  • 2 ½ tablespoons sugar or taste
  • 1 ¼ teaspoon cornstarch
  • Juice of ½ a lime

Ingredients for Hotdogs:

  • 1 hot dog bun
  • 1pork or beef hot dogs or veggie dogs
  • 1 cup of pineapple sauce
  • 1 cup of cole slaw
  • potato chips, crushed into pieces
  • Mayonnaise
  • Ketchup
  • Mustard

Stuffed to perfection

When a plain burger doesn’t appetite you, try a stuffed burger. A stuffed burger is as simple to make as a regular burger, but with double the taste. When you’re done with this recipe you will end up with a food masterpiece. To begin the cooking process, pick out you’re favorite blend of ground beef. If you want to make it healthier you can use turkey meat instead. You will need real bacon bits, grape tomatoes, fresh mozzarella, fresh basil leaves, your favorite burger seasoning blend and buns. Start by seasoning both burger patties. Add some bacon, some cut up grape tomatoes, add pieces of fresh mozzarella, and then top it off with basil. Now you can put both patties together and pinch them on the sides to enclose the ingredients between both patties. After you’ve done this, it’s off to the grill. When it is done grilling, put it in the bun and it is ready to eat. Enjoy this deliciousness!

Smoothie Delight

If you’re not in the mood for cooking and just want a quick and healthy snack, a smoothie is a great choice. A great smoothie choice is a banana and strawberry smoothie, with a kick. The kick is orange juice. It gives it a tangy taste to balance out the sweetness. The ingredients are simple and so are the materials. You will need about three strawberries, one banana sliced into small pieces, ice and orange juice. You may add sugar, but the less sugar the better.  You will also need a blender, the Magic Bullet makes it very easy to make, but any blender will do. After you have all the ingredients, blend them well for a thick texture and if it’s too tangy for you’re taste you can always add more sugar. Enjoy!

Welcome Food Lovers

As college students, we are always looking for the quickest, cheapest and easiest way to have a good meal between all the other activities we have going on in our day. Usually we resort to the ever so popular Ramen noodles or pick up some cheap fast food. This is why I chose to create a blog that provides on-the-go college students with simple recipes. You will save money and time by making these delicious recipes at home, right between classes or after a long day. Every blog post I will put up a recipe and tips I think might be useful in the cooking process. You don’t have to be an expert cook to recreate these at home.
